Ingredients
1 whole Beef Brisket whole packer or flat cut brisket
1 Extra Virgin Olive Oil No Exceptions
1 Bottle Your Favorite BBQ Rub (for Beef)
Instructions
Rub brisket liberally with olive oil.
Rub brisket liberally with seasoning (both sides).
Marinate for a minimum of 8 hours (10 to 12 hours preferred)
30 minutes prior to cooking, remove brisket, and apply a coat of rub liberally to top of brisket.
Build fire and bring pit to desired cooking temp (225 – 250)
Place Brisket in smoker
When brisket has achieved the desired bark color (about 4 to 5 hours) Wrap
Brisket in heavy duty aluminum foil, and place in an aluminum half pan. Finish cooking
Notes
until brisket reaches a desired temp of 190 – 195. The brisket should feel tender with the
thermometer. Remove from cooker and place in a warm environment to rest for 1 to 2
hours.
Slice brisket against the grain in slices roughly 3/8 of an inch thick.
Serve with BBQ sauce and/or Au Jus…
